Raw Mango Pickle, Kairi Lonache, Kachcha Aam Achaar

Pickles have varieties. There is no standard recipe for any pickle. And each of those tastes as yummy.
Here is a recipe of raw mango pickle which can be stored for years. 
No added preservatives. Oil and salt are the best natural preservatives for storing any pickle.
One only has to ensure to keep away water or any humidity.
Listed below is a proportion of pickle long enough for a year. I insist to jot down the proportion and method used for making storable pickles because such details go off the memory very quickly.

Ingredients of raw mango pickle :

  • Raw mangoes - 3kg
  • Salt - 3 bowls
  • Turmeric (Haldi/Halad) - 3 tsp to apply on mango pieces
  • Red chili powder - 1.5 bowl that is fried in 3/4bowl oil
  • Fenugreek seeds (Methi) - Fry in oil and Powder - 6 tsp
  • Rai / Mustard - 100 gm, so as to get around 1.5 bowl powder
  • Raw asafoeida - 1tsp (to add at the last)
  • Hira Hing (asafoetida stone) - 10gm, fry & powder
  • Tempering: oil (1/2kg), mustard, turmeric
