This is a mouthwatering recipe of raw mango.

Ingredients of Methamba :
Raw mango - 4
Salt, Red chili powder
Fenugreek seeds - 1tsp
Oil, Mustard, Asafoetida, Turmeric
Raw mango chutney recipe :
- Wash and clean the raw mangoes.
- In a pressure cooker, steam them for 10 min.
- Peel way the soft rind of the raw mangoes.
- Scrap the pulp of the boiled mangoes in a bowl. Scrap the peeled skin with a spoon and get the pulp.
- Add softened jaggery to the pulp. And keep it aside for almost 20 min until the jaggery dissolves. The mixture would turn a bit thinner due to dissolved jaggery.
- Now add salt and mix well.
- Sprinkle 1 or 2 teaspoons of red chili powder over the mixture and leave it. Do Not Stir.
- Heat oil for tempering. Add 1 teaspoon of fenugreek seeds to the hot oil, followed by mustartd, cumin, asafoetida and turmeric.
- Now pour this tempering over the sprinkled red chili powder from all the sides.
- Mix well. Recipe is ready.
Kairi raita is a tasty blend of sweetness and sourness. If the raw mangoes are sweeter than usual, add lesser jaggery.
